Always wondering what to cook for supper? Have you had a long day of work and can't bear the dreaded question, "What's for Dinner?" Well I feel you pain. When my oldest daughter was in high school, she would text me every morning at like 9:00 "What's for supper?" I'm like really? Didn't you just leave the house an hour ago? I always try to have a plan ahead of time for supper. We don't live in the city and can't run back and forth to the grocery store. But, sometimes I'm just no on my game, and I have these go-to dinners that are quick and easy and I usually have the few ingredients I need in my pantry.
Breakfast for Supper-We love breakfast for supper! We rarely eat a big breakfast on the weekends, so when I make this for supper, it’s a real treat. I put together a combination of eggs, pancakes, bacon, biscuits, waffles, sausage, cinnamon rolls, grits…..I could go on and on…I don’t do all of these things for the meal, but I pick and choose a few of them and mix it up.
Quesadillas-This is so, so, so easy…..I literally have flour tortillas, cheese, chicken or beef, and onions. I just Sautee’ the onions up and assemble the quesadilla in a frying pan to let all the gooiness melt together and end up with a quick and yummy supper! I like to use my Air Fryer (like this one) and it makes it super crispy and quick!
Fried Rice-My 15-year-old would track you down in a dark alley and take your left arm to get this fried rice away from someone! I just stumbled upon this recipe and make it at least once a week. It is fast, easy and delicious. I shared the recipe here!
Grilled Chicken Salad-I can never go wrong with some sort of salad. So, I keep a variety of salad ingredients in my refrigerator always. Add a little protein to it, and even the hubby is happy. I don’t always grill the chicken, sometimes I bake it or cook it on top of the stove, whatever is easiest at the time. But throw together some lettuce, tomatoes, carrots, eggs, cucumbers, croutons, bacon bits, and anything else we can put on our salad, and we are eating a healthy, quick AND great tasting supper.
Shells-When I was a teenager, I would go visit my sister, who is 5 years older than me, and lived 2 hours away. She would make me shells and I thought it was a gourmet dinner! Literally, pasta shells and marinara sauce. If she had cheese, we would top it with some shredded cheese, if not, that was good too. At my house, I try to add a loaf of garlic bread to go with it, and you’d think my kids thought they were at a fine Italian restaurant.
Moral of this story is, it IS possible to get together a quick, easy AND healthy dinner during the week. I also use lots of these ideas on the weekend for lunch if I need to throw something together quickly! Don’t forget to get your Pantry Basics for Quick Weeknight Dinners below!
